If you're comfortable with CLI (or even if you're not, it's a worthy pursuit for curating video files), try FFmpeg and either the ' loudnorm' or ' dynaudnorm' filter (loudnorm first), and commit as many batches per day as you can. Make two outputs for the audio, copy the first one, but convert the 2nd one to stereo, with audio normalization and you should be good to go. But it's easy to use and you'll have a big list in no time once you get it down. It just takes some initial configuration per file. Years ago, when I wasn't ready to try the CLI (command-line interface) of FFmpeg, I used XMedia Recode and it really simplifies making batches/queues of conversions. When you get out of that "can't" mindset, there are minor to modestly challenging ways to fix it. There is an option on the player for "Multi-Chanel Audio Boost" which is supposed to increase the volume when converting multi-channel audio to stereo, but that's not really what you're looking for I think? But, have you given that a shot yet? It didn't help me in the past but it's worth mentioning (it will only work if audio is being trans-coded I've read, and most audio is in a format that just gets passed to the player). I wish Plex had normalization, but I'm not holding my breath.
